  • Hey Thai food lovers, help me out.

    My wife was in Kansas City this week, and last night her group ate at a Thai restaurant. She brought me 2 bottles of sauce from the restaurant. No labels on the bottle. And she can't recall the name of the place where she ate.

    Anyway the sauce is good and I would like to recreate it. The sauce has a greenish - brown color to it. It was about as spicy as a jalapeno. The sauce has a LOT of seeds on it, and I can see small pieces of red and green peppers in it. The sauce is just a little thicker than what I would call a thin sauce. It has some sweetness to it. My wife said people were using it on stir fry. It also has a faint taste of fish sauce. I am not sure if there is any vinegar in it, but I think so.

    Anybody know what this sauce might be called? Not the actual name the restaurant would use on a label, but the style of the sauce, or local name. It looked a lot like this, but with more of a brown hue. This picture calls it Dragon Sauce.... does that sound right?

            Nope. The company she went to visit paid for everything... I am sure she could make a call, but she is already away again with my daughter at a volleyball tournament.

                          Is the sauce sweet at all? A very common Thai sauce is a tsp of salt, Tbsp sugar, 2-3 peppers and a clove of garlic in a half cup of rice vinegar. Use jalapenoes and you get a mild green version. Use ripe Thai chilies and you get a hot red sauce.

                          This is a curry sauce from Judith's files. I cannot vouch for it.

                          1 stalk lemongrass, minced
                          1-3 green chilies, sliced
                          1/4 cup minced sweet or green onion
                          4-5 cloves garlic
                          1 thumb-size piece of galangal or ginger, thinly sliced
                          1/2 cup chopped cilantro
                          1/2 cup fresh Thai basil
                          1/2 tsp ground cumin
                          1/2 tsp ground coriander
                          3 Tbsp fish sauce
                          1 tsp shrimp paste
                          brown sugar to taste
