Are we certain the sauces weren't fake for this one? It's one thing to endure misery for a bit, but physiologically he didn't seem that fazed either. Entertaining either way.

I don't think the show has ever faked them and doing so would really hurt their brand and anger the masochistic fanbase. FWIW, Conan talked about it afterward, indicating the aftermath was bad. That could just be keeping up with the conspiracy, but I just don't think the show would risk it, for anyone. And I also don't think Conan is that good of an actor to play the part of someone pretending to not be affected with another layer of also playing someone who is showing signs that he is being affected by it.
