My local grocery store does not get shark in very often. Then sometimes when they do, it just doesn't quiet look like I want it to. I want to see white steaks that look sort of like a New York Strip only white with some pink lines running through it. I hit gold this last trip. It looked so good I did not think to ask them what kind of shark. It doesn't really matter because I buy it by sight. Although in hind sight it would be nice to know.
I typically like to grill it but today I didn't have time. So I pan fried it on high heat and added a sweat teriyaki type glaze. Came out perfect. I am having a side salad with it.
It is not fishy at all. It has the consistency of a tender pork chop. I like the density of it and prefer it over swordfish.
Any of you like shark?
