Yes. Cut it off after 12 rounds or so but have people draft whatever positions they want in those rounds.

I think with how slow we can draft, we can't wait until after the 2nd preseason game if this is going to be of much use. We're all smart enough that if a running back gets injured in the 2nd preseason game and looks to be out 12 weeks, we won't draft him!

Agreed. These tend to drag out and starting in two weeks would have us potentially going in to the season.

If we're not going to do 3 WR/1 Flex, then I prefer 2 WR/1 Flex.

Yeah, it's a mock, not a real league. It's nice to get some sort of consensus as to parameters but there's no point in fine-tuning it after a certain point.
