So lots of Kauai peeps in here. What should I make sure I don't miss? Staying on the south shore, but I rented a car.

Floats through the jungle rivers where you stop and check out natural swimming pools and eat those delicious guavas hanging everywhere. There are tons of cats and chickens in the Kauai jungle, too, which is fucking weird and pretty cool. Beaches along the north shore near Hanalei are very exceelent.

I would recommend floating as opposed to flying. Much more relaxing experience

That seems pretty steep for 3 hours of tubing. That said, one of the challenging parts of doing it yourself is you need two cars (or a car and an uber). Innertubes will probably set you back 30-50 bucks as well. Plus you'd want a spare if you are out in the jungle by yourself.

I've done a few different trips in Kauai and they were always planned things rather than winging it. I think maybe we did some sort of tube float at some point but the one I remember as being super fun was when we had our own kayaks. We started on a larger river and then hiked through the jungle for a while and eventually took a dip in some natural pool where they filmed Pirates of the Caribbean.
