I know Tuffy Rhodes' 3 HR opening day stands out as the most extreme example here but for some reason Chris Shelton's opening to the 2006 season always sticks in my mind.
After 15 games, he was hitting .431/.476/1.086 with 9 hr's, 17 rbi, and 13 runs. He ended the season hitting .273/.340/.466 with 16 hr's, 47 rbi and 50 runs in 115 games. Pretty amazing to get more than half of your season home run total and almost half of your season rbi total in 15 games. There's a more detailed breakdown of it here:
